One of my favorite things about the arrival of cooler weather is this recipe. The best part? It is easy!
Crock Pot Chicken Chili
2 or 4 frozen chicken breasts
2 cans black beans (seasoned or unseasoned)
2 cans corn
1 can Rotel (if you don't want the extra spice, just used diced tomatoes)
1 package taco seasoning
Place the chicken on the bottom of your crock pot. Open all your cans and pour them on top of the chicken. You don't even have to drain them! Add the taco seasoning to the top and cook on high for 4 hours. Shred the chicken with a fork. Serve with chips, sour cream, and cheese. So so good and easy! Serve it up, light a fire in your fireplace, and enjoy!
